Taste & Create: Broccoli Soup

Did you know that in Sweden it is traditional to have soup on Thursdays? Specifically; yellow split pea soup because yellow split peas are associated with Thor and Thursday is, after all Thor's Day!

This recipe is not for yellow spilt pea soup. This recipe is for Broccoli Soup. This is because we had approximately a million (AKA 2) broccolis and no spilt peas (I used them making soup for last Thursday!)...

This soup that I made for Taste & Create this month is simple, tasty, vegan (if you let it be, I didn't) and requires very few ingredients. It's fantastic for Students and Real People alike! It also came out the most fantastic shade of green:

I fried the cumin seeds and garlic in butter as PJ of Seduce Your Tastebuds recommended in butter because I like butter. And I think garlic tastes better fried in butter, over oil... But, as oil is such an easy substitute; I still think it's fair to store this recipe as a vegan option.

The potato gives the blended soup a creamy texture without the addition of milk or cream. PJ pressure cooks her potatoes and broccoli; but I don't have a pressure cooker in my student kitchen so I boiled my potato and steamed the broccoli over it... Feel free, however to boil your broccoli and potato together; bearing in mind that the broccoli won't need quite so long to cook as the potato and over-cooked broccoli is a kinda funky colour...

Taste & Create: Thali - Aloo Fry

Hej, hej!

Remember my Thali from Taste & Create way back? Well... I've been paired with PJ of Seduce Your Tastebuds once again and I feel this is the optimum opportunity for me to finally get around to posting the full recipes I made last time... thus reminding both you and me how awesome they are! (It's a sign from the Gods, I tell you!)

Top: Tomato Riata, Aloo Fry, Garlicky Spinach Rice
Centre: Black Sesame Chutney
Bottom: Sambar made with home-made Sambar Powder
Although I really liked (most) of the dishes I made... Far and away my favourite (and the one I've made most often since) was PJ's Aloo Fry...


The crunch provided by the whole spices and slightly crispy fried potatoes in this dish really blew me away. Think; pan roasted, Indian spiced roast potatoes!

*drool*

Most of the spices required here (mustard seed, cumin seed, coriander seed) are not all that "unusual" and if, as a student, you were to go out and buy a packet - I'm sure you'd find many reasons to use them again and again. (Packet curries very rarely stand up to their homemade counterparts). The fenugreek (kasuri methi) leaves are a liiitle bit more unusual... and although they definitely add an enjoyable extra dimension to the dish; I hope I'll be forgiven for suggesting that you can probably get away without them if it's beyond your means.

Taste & Create: Seduce Your Taste Buds Thali

Eugh. I feel like a Zombie. I've gone from unemployed to over-employed in no time flat! (Not that I'm complaining per se - I'm grateful for the opportunity to be earning some savings!)But I've got a looong week of 3 shifts/day for the next 7 days so this is gonna be a brief post to get the important things out there... :)

After next week I will fill y'all in on all the details!

I had fun with Taste and Create this month! I was paired with Padmajha of Seduce Your Tastebuds and my taste buds were most certainly seduced! PJ offers a lot of tasty looking vegetarian, Indian food. Rather than selecting just one recipe to try out - I decided to chose five, and make a Thali.

'Thali' refers to the plate used to serve this meal, and is basically either a metal tray with little dishes for many curries/chutneys or a single plate with indentations. The thalis we have are of the indentation variety.

The recipes I chose were:
  • Aloo (potato) Fry which was amazing my favourite dish of the five! Spicy, slightly crispy and the most beautiful shade of yellow. Yum yum.
  • Sambar which is a sort of runny lentil dish that I'm not a huge fan of. And, although tasty, this particular recipe didn't make a convert out of me... my guests really enjoyed it though! I really enjoyed getting out the mortar and pestle to grind my own sambar powder though!
  • Garlicky Spinach Rice does what it says on the package - it's the most lurid green colour! Just brilliant!
  • Tomato Raita which is a little different for the cucumber/minty raita I'd usually make. It was fun and will no doubt feature on my table again!
and finally...
Now, as students, some of the spices called for may be a little odd... but, if you can buy them in only the quantities you require, can be sourced quite cheaply! I especially recommend the Aloo Fry as a good flatting meal!

Final conclusion? This was fun! And with the exception of the Sambar (which is more a reflection on me, than on the recipe itself) I'll be making these recipes in the future! The Aloo Fry was the absolute star!

Kat/Nigella's Blood and Guts Potatoes

As a follow on from my last night's post, and as requested by my friend Stevo... My version of Nigella's Blood and Guts Potatoes...

Mine are a little different't from Nigella's because "three ghost white balls of mozzarella" just ain't happenin' in this Kiwi student's flat! But small cubes of ordinary Edam do sort of afford you a "kind of intestinal goo" although, I imagine, to a lesser degree than good ol' mozza would... Oh well! Marines Kiwis make do!

Sooo... it's not the world's prettiest food item, but it sure is tasty!
Despite the desperate lack of mozzarella, these make a tasty potato side with an unfortunate tendency to distract me from the fact that I'm technically avoiding starchy carbs right now... Still, half a potato never hurt anyone, right?

Any left over filling can be mixed with an egg and baked in a tinfoil cup for your boyfriend's lunch the next day - just be sure to write his initials in tomato sauce on the top!

RWW: A Nigella Meal!

(Wednesday, Sunday... same diff, right?)

So... It was coming up to tea-time and I was watching my Nigella DVDs. More specifically, I was watching my 'Nigella Feasts' DVD - Fun Food where she discusses making awesome food for children and then naming said food items "Blood and Guts Potatoes" or "Slime Soup" - how's a girl to resist, I ask you?!

Being that I had no specific plans for tea yet (woops...) I allowed Nigella to guide me - and I created a delicious (though I do say so myself...) Nigella inspired meal. There were three components to this meal, and I'm rather proud of them - so I'm going to post the recipes separately but for now here's an image:

Kat Style Oven Fries

I'll be the first to admit that my homemade oven fries need a little work... I can never make them just the way I want! But... other people seem to enjoy them and you can tweak the recipe until it works for you... Although when it does you simply MUST let me know!

I serve my fries with burgers, chicken-fried steak, beef steak, cheese and chilli, fish... They're super useful! :)
